Improved Chocolate Chip Cookies

It was sometime last week that I attempted a slight variation on the chocolate chip cookies I’d made previously, which were so soft you had too tear them apart as they would not snap like biscuits.

That’s not necessarily a bad thing but I still wanted to try and alternative approach that might give a more ‘expected’ result.

Cookies in the Halogen Oven

You’ll get to read about this in another post shortly but, this past Sunday, I successfully led my first walk of the year, with previous walk-leading experiences having come all the way back in July.

For this occasion, I decided that I would continue my tradition of baking something… I considered brownies, which I’d attempted on another walk last year. Shortbread seemed the easiest option – but again, it would be too familiar with July’s walk. Then, as I began to think of biscuits, I settled upon the idea of cookies.

Carrot Cake Muffins

As I discovered a few months ago, I really like carrot cake. I forget the occasion as to why I made these (other than the fact that I was feeling greedy) but I was able to share them around with a few people and there was nothing bad to say.

This recipe, originally, for chocolate and hazelnut swirls, is taken from Sarah Flower’s Perfect Baking With Your Halogen Oven book.

Raisin and Ginger Cake

This is I baked on my birthday, which was almost three-weeks ago to the day. It seems so long ago now… And yet, writing these words, I realise that I’ve eaten quite a lot of baked goods in a relatively short space of time! You could almost look at this one as the ‘warm-up‘ ahead of the chocolate overdose that was to follow days later!

My First Muffins

Last night, I felt inclined to give you a brief respite from a minor flood of baking goodness. But this post is important to me because it coincides with the first walk I’ve lead this year and as that was already five-days ago, I’d like to get this one out before the week has passed.

This post marks my first ever attempt at baking my own muffins.
