Cookies in the Halogen Oven

You’ll get to read about this in another post shortly but, this past Sunday, I successfully led my first walk of the year, with previous walk-leading experiences having come all the way back in July.

For this occasion, I decided that I would continue my tradition of baking something… I considered brownies, which I’d attempted on another walk last year. Shortbread seemed the easiest option – but again, it would be too familiar with July’s walk. Then, as I began to think of biscuits, I settled upon the idea of cookies.

Carrot Cake Muffins

As I discovered a few months ago, I really like carrot cake. I forget the occasion as to why I made these (other than the fact that I was feeling greedy) but I was able to share them around with a few people and there was nothing bad to say.

Raisin and Ginger Cake

This is I baked on my birthday, which was almost three-weeks ago to the day. It seems so long ago now… And yet, writing these words, I realise that I’ve eaten quite a lot of baked goods in a relatively short space of time! Carrot Cake Success!

This was my first baking effort of 2015 and, in case that’s not enough of a feat on its own; it also happens to have become the best cake that I have so far produced in almost one year of Halogen Oven trial-and-error!

Ready, steady, bake!

You’ll have to go to BBC Good Food if you’d like to see the recipe.

Shepherd’s Pie At Night

It was Monday evening; a slow start to another all-too-familiar week. I needed something to pick myself up and I found that in the challenge of baking my first ever shepherd’s pie. Plus, I’d already bought the necessary ingredients a week earlier.

No potato.

Cooking with Chicken

Having already made a few successful roast dinners (for one person) using a pack of plain chicken breasts, I decided, last week, to have a go at a couple of different chicken dishes.

There’s a distinctly Aisian theme to this and it started with these terriyaki-style meatballs.
