Improved Chocolate Chip Cookies

It was sometime last week that I attempted a slight variation on the chocolate chip cookies I’d made previously, which were so soft you had too tear them apart as they would not snap like biscuits.

That’s not necessarily a bad thing but I still wanted to try and alternative approach that might give a more ‘expected’ result.

Cookies in the Halogen Oven

You’ll get to read about this in another post shortly but, this past Sunday, I successfully led my first walk of the year, with previous walk-leading experiences having come all the way back in July.

For this occasion, I decided that I would continue my tradition of baking something… I considered brownies, which I’d attempted on another walk last year. Shortbread seemed the easiest option – but again, it would be too familiar with July’s walk. Then, as I began to think of biscuits, I settled upon the idea of cookies.

Baking Brownies

Sometimes, a very good recipe can emerge from right under your nose…

I’ve spent a lot of hours in the past, searching for the ideal recipe to suit one of many occasions. You see, this recipe for baking brownies was found on the side of a bag of Lidl’s dark brown sugar!

Christmas Pudding Brownie

I do hope everyone has had and is still enjoying a good and healthy Christmas, wherever you are.

Carrot Cake Muffins

As I discovered a few months ago, I really like carrot cake. I forget the occasion as to why I made these (other than the fact that I was feeling greedy) but I was able to share them around with a few people and there was nothing bad to say.

You can find the recipe in Sarah Flower’s Halogen Oven book on baking.

Fat-Less Sponge Cake

My mum’s birthday was approaching recently and I’d decided that, for the second year running, I wanted to bake her a cake. Conscious of the fact that not everyone likes to eat as much cake as I do, I decided to try a fat-less sponge cake recipe from Sarah Flower’s book for the Halogen Oven.

When Biscuits Go Bad

As far as baking goes, I’ve always seen biscuits as perhaps the simplest of options available. Cakes can sink and sag but, being relatively flat, there isn’t a lot that can go wrong with a biscuit, is there?

This was my first attempt from a Flora recipe for Easy Cinnamon and Raisin Cookies.
